Spiced Devilled Eggs

Ingredients

• 2 tbsp ground coriander
• 2 tbsp ground cumin
• 1 1/2 tbsp ground turmeric
• 2 tsp ground ginger
• 1 tsp mustard powder
• 1/2 tsp ground black pepper
• 1 tsp ground cinnamon
• 1/2 tsp ground cardamom
• 1/2 tsp Kashmiri chilli
• 12 eggs, boiled
• 2 tbsp mayonnaise
• 1 tbsp above spice blend
• Three Threes Pickled Onions and Gherkins

Methods

1. Make spice blend and set aside in jar.
2. Remove yolks from whites and in a small food processor blend with the rest of the ingredients to a smooth paste, season. Place in piping bag with a star tip.
3. Pipe into whites.
4. Serve with pickles
