Ingredients

INGREDIENTS (Beef)
  • 4 x 200g Angus Reserve Sirloin
  • Salt and pepper to taste
INGREDIENTS (Roasted Rice Powder)
  • 1 cup uncooked glutinous rice
INGREDIENTS (Salad with Roasted Rice)
  • 1 punnet Perfection Fresh Monterosa Heirloom Tomatoes, sliced into halves
  • ½ bunch watercress or watercress shoots, or wasabi leaves if available
  • 2 kaffir lime leaves, chiffonade
  • ½ cup mint leaves
  • ½ coriander leaves
  • ¼ bunch spring, finely sliced on an angle
  • Splash of Rio Vista Extra Virgin Olive Oil
  • 4 Perfection Fresh Qukes® Baby Cucumbers or 1 Perfection Bambino® Wombok Heart​​ shredded into long juliennes
  • Roasted rice powder
INGREDIENTS (Hot and Sour Dressing)
  • 150ml lime juice
  • 50ml fish sauce
  • 1 tsp chilli powder

Methods

  • Beginning with the roasted rice powder, toast the glutinous rice in an oven at 160°C until golden. Grind into a fine powder
  • In a bowl mix lime juice, fish sauce and chilli powder and mix well. It should taste hot and sour and salty
  • Cook steak to medium rare and let it rest. Slice into even pieces
  • Drizzle the prepared dressing over the steak
  • Mix cucumber, mint, coriander, lime leaf and tomatoes in a bowl. Dress with olive oil and more dressing
  • Garnish with salad and roasted rice powder
