Prepare a flavourful and tender pork belly with Our Cow Pork Belly. Bake at 160 degrees for 3 hours, then increase to 250 degrees for the last 10 minutes to achieve perfect crackling. Let it rest for 10-15 minutes, slice thickly, and enjoy. Buon Appetito!

Full Recipe In details

Ingredients

  • 1 Our Cow Pork Belly approx 2.5kg
  • 1 bunch of rosemary
  • 1 bunch of sage
  • 1 bunch of thyme
  • 50g fennel seeds
  • Salt and Pepper

Methods

  • Roughly chop all the herbs
  • Lay down the Our Cow Pork Belly and pat it down from excess moisture
  • Sprinkle over salt, pepper, fennel seeds and the herbs
  • Roll and tie it up with some butchers twine
  • Bake it for 3hrs at 160 degrees in the oven
  • For the last 10 minutes put it at 250 degrees to get the crackling
  • Once out of the oven let it rest for at least 10-15 minutes, then cut into thick slices and eat, Buon Appetito.
