Ingredients

  • 1 D’Orsogna Chorizo (chopped)

  • 800g Perfection Fresh Cherry Tomatoes (Diced)

  • 1 chopped large yellow onion

  • 1/4 teaspoon chilli flakes

  • 1/2 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • 1/2 teaspoon cayenne pepper

  • 1 can cannellini beans

  • 1 1/2 tablespoon sugar

  • 3 eggs

  • Handful of chopped parsley

  • Olive oil to drizzle

Methods

  • Coat a deep pan with olive oil and heat it over the stove.

  • Once hot, add the Chorizo, chopped onion and tomatoes into the pan.

  • Add in the cannellini beans with some of the liquid from the can.

  • Add in the smoked paprika, cumine, cayenne pepper and chilli flakes.

  • Allow the mixture to simmer and cook down over medium heat.

  • If desired, add in oven roasted garlic and tomatoes with some of the liquid.

  • Add in sugar and stir to combine. Create three dibits in the mixture and crack an egg into each one.

  • Place into an oven pre-heated to 180℃ for 5-10 minutes.

  • Once out of the oven, sprinkle salt and pepper to taste. Garnish with freshly chopped parsley and serve immediately.
